"Quello che ci mette, ci trova."
- Italian Saying
This old Italian saying translates in English to, "What one puts in a dish, one finds." We think it's a comment on ingredients - not just the literal vegetables, oils and spices, but the tradition, the culture, the intention. It's also a comment on outcomes. You can't make a cake with green beans and rice. We can't live planet-friendly lives without the right ingredients either. It's a great saying because it plays on so many levels.
Definitions of food abound. Most of them boil down to something like this: food is any substance that can be metabolized by an organism to give energy and build tissue. Hmmm. Not being entirely literal types, we don't feel a great attachment to such definitions. In fact, we flat out disagree. If food could really be completely explained this way, there would be no context for the existence of creme brule, and that would simply not do! It would also mean life without pizza,
chocolate cake, fresh bread, coffee, wine and cheese. Yikes!
Let's talk about what it really is - nourishment and entertainment. Yep. That's what we think. And like everything else, there are forms of entertainment that sustain us and our surroundings, and there are some that don't. We believe in foods that are painfully delicious, and that sustain our bodies and our planet. No reason to cut back to eating our wheat right off the stalk, but we can nourish and entertain ourselves in ways that are healthy for us and our world.
